Meet our Chef
Justo del Amo
Born in Salamanca, Spain, Justo studied at the Hospitality School in Marbella. He gained his experience in regional Spanish cuisine by working in Paradores before moving to Australia where he stayed some seventeen years gaining experience in international cuisine working in top restaurants and hotels. He worked for several years as Chef Consultant for the Spanish Embassy in Sydney and taught Spanish cuisine in Australia, New Zealand and Singapore before coming back to Spain to settle in Extremadura where he felt in love with its people, its food, and its top quality products. He is the president of Slow Food in Extremadura (Convivium Extremadura).
